From the Quiché heartland of Mayan descendants, this harvest comes from a cooperative of primarily indigenous women farmers. Dozens of members of this cooperative are celebrated for their exploration of biochemistry via coffee nurseries, where varieties are mixed with organic inputs and grafting techniques. Produced via the honey process, this coffee is a hybrid of the washed and natural processes which results in a unique blend of fruity notes and syrupy sweetness. It's made further complex by the cooperative's innovative coffee varieties—all that work really shows with the subtle spice notes of cardamom, nutmeg, and clove.
